Chana Masala in Kastrup — Spiced Chickpea Curry, Order Takeaway

Chana masala — spiced chickpea curry in a dark bowl, garnished with cilantro, served at Inder'n in Kastrup near Copenhagen Airport

Chana masala is one of those dishes that divides the room at first glance — and then converts everyone at the first bite. Chickpeas are not the most glamorous ingredient on a menu, but when they are slow-cooked in a properly built spice base, they absorb flavour in a way that even the richest meat curries can't quite match. At Inder'n in Kastrup, our chana masala is made daily from scratch, and it has quietly become one of our most ordered vegetarian dishes.

If you're looking for chana masala in Kastrup — or anywhere on Amager — this post covers what makes the dish unique, how we make it, and how to get it to your door in under 20 minutes.

What Is Chana Masala?

Chana masala (also written chole masala) originates from the Punjab region of northern India and Pakistan. "Chana" simply means chickpea in Hindi, and "masala" refers to the spice blend. The dish is eaten across the entire subcontinent — from roadside dhabas to wedding banquets — because it is cheap, filling, deeply flavourful, and entirely plant-based.

What sets chana masala apart from a generic chickpea curry is the spice profile. Where many curries lean on cream or butter to carry flavour, chana masala is built on dry spices that are toasted and layered into the sauce. The hallmarks are cumin, coriander, garam masala, dried chilli, and — critically — amchur, or dried raw mango powder. Amchur introduces a subtle tartness that you can feel but often can't name. It lifts the entire dish, preventing it from going flat or heavy.

Good chana masala should taste layered: earthy, tangy, faintly smoky, with heat that builds gradually rather than hitting immediately. The chickpeas themselves should be fully cooked but firm, not mushy — they should hold their shape and carry the sauce rather than dissolve into it.

How We Make Chana Masala at Inder'n

We start with whole dried chickpeas, not canned. They are soaked overnight and then cooked until just tender — this takes longer, but the texture is incomparably better. Canned chickpeas have a softness that makes the finished dish feel blurry. Properly cooked dried chickpeas stay defined.

The base starts with onions cooked low and slow until they are deeply golden — not caramelised in the French sense, but browned and sweet, the way North Indian cooking demands. Ginger and garlic go in next. Then the spices: cumin seeds first (toasted directly in the oil), followed by coriander, turmeric, chilli powder, and garam masala. Fresh tomatoes are added and cooked down until the oil separates from the paste — this is called bhunao, and it is the step most home cooks skip. It is also the step that makes the difference.

The cooked chickpeas are added to this base, along with a splash of the cooking water to build the sauce. Amchur and a squeeze of fresh lemon go in at the end. The dish is finished with fresh coriander leaf and served with warm naan or basmati rice.

The result is a curry that is bold, textured, and completely satisfying — with no cream, no butter, no meat. Just chickpeas and spices, done properly.

Chana Masala as a Meal: What to Order With It

Chana masala is one of the most versatile dishes on our menu. It pairs well with almost anything, which is part of why it works so well in a shared takeaway order.

If you want to keep the meal plant-based, order it with plain naan or garlic naan from our bread section. A mango lassi on the side provides a sweet, cooling contrast to the spice — it is the classic combination for a reason. If you are ordering for a group, chana masala works well alongside a meat dish like chicken tikka masala or lamb rogan josh, giving everyone at the table something to try.

It is also one of the best dishes to order if you are new to Indian food and unsure where to start. It is assertively spiced but not aggressively hot. The flavours are complex but not unfamiliar. And because it is vegetarian, it fits most dietary requirements without needing adjustment.

Why Chana Masala Earns Its Place on Any Serious Menu

There is a version of Indian takeaway that exists mainly to be inoffensive — mild butter chicken, pilau rice, papadums, done. That is not what we do at Inder'n. Our goal is to cook the food we grew up eating, which means giving dishes like chana masala the same attention as the more "glamorous" options on the menu.

Chana masala is not a fallback option for vegetarians. It is a dish with centuries of culinary history, eaten by people who could choose anything and still reach for this. We think it deserves to be understood that way — and we think our version makes a strong case.

If you have not tried it yet, we recommend ordering it alongside something else the first time. Then, when you find yourself wanting to order it again on its own, you will know why.
